Gratinated stuffed vegetables in just 20 minutes! Tomatoes and peppers with a fragrant filling and crust. The super easy one-pan meal that elegantly empties the fridge.
Ingredients
- 2 large cluster tomatoes
- 2 medium bell peppers
- 150g Arborio rice or ground meat
- Breadcrumbs, to taste
- Grated Parmesan cheese, to taste
- Extra virgin olive oil
- Salt
- Fresh basil
Instructions
Cut the tops off the tomatoes and bell peppers. Remove the seeds. Blend the pulp from the tomatoes.
Combine the uncooked rice or ground meat with the blended tomato pulp, olive oil, salt, grated Parmesan cheese, and chopped basil.
Fill the vegetables three-quarters full to allow for rice expansion. Replace the vegetable tops or sprinkle with breadcrumbs.
Arrange the stuffed vegetables in the cooking basket.
Cook at 355°F (180°C) for 20-25 minutes, until the vegetables are tender and the filling is cooked through.
