Ingredients
- Salmon Fillets, 4 (4.2 oz each)
- Cherry Tomatoes, chopped, 5.6 oz
- Cucumber, diced, 1/2
- Red Onion, finely minced, 1/2
- Fresh Parsley, chopped, 0.2 oz
- Fresh Dill, chopped, 0.18 oz
- Olive Oil, 2 tbsp
- Red Wine Vinegar, 1 tbsp
- Salt, to taste
- Black Pepper, to taste
Instructions
Brush salmon fillets with oil. Season with salt and pepper.
Cook at 400°F for 7 to 9 minutes.
While salmon is cooking, combine chopped tomatoes, diced cucumber, minced onion, parsley, and dill in a bowl.
Dress the vegetable mixture with red wine vinegar and olive oil. Mix well.
Remove salmon from the appliance. Serve each fillet topped with the vegetable salad.
