Panko-Crusted Cod (Refined and Super Crispy)
Forget the usual bland fish fillet! Create a golden, buttery, lemon-scented crust in 10 minutes using Japanese Panko. A light main course with a crazy crunch.
Ingredients
- 4 cod fillets (4.6 oz each)
- 3 oz Panko breadcrumbs
- 1.8 oz melted butter
- 2 tbsp finely chopped fresh parsley
- 1 lemon, zest and juice
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
Season both sides of each cod fillet with salt.
In a bowl, combine the Panko breadcrumbs, melted butter, parsley, lemon zest, lemon juice, and pepper. Mix until well combined.
Distribute the mixture evenly over the top of each fillet, pressing lightly to adhere.
Place the fillets in the cooking basket with the breaded side facing up.
Cook at 340°F for 10 minutes, or until the crust is golden brown.
