The leveled-up roast chicken! Cook it whole at 355°F to seal the meat, then in the last 10 mins lower to 320°F and brush generously with BBQ sauce for a sweet-and-sour, smoke-free crust.
Ingredients
- 1 whole chicken, approx. 46 oz
- 2 tbsp olive oil
- Salt and black pepper
- 5-6 tbsp thick BBQ sauce
Instructions
Truss the chicken legs. Pat the skin dry. Rub the entire surface with olive oil and season with salt and pepper.
Place the chicken in the basket, breast-side down. Cook at 355°F for 30 minutes.
Flip the chicken breast-side up. Continue cooking for 10 minutes.
For the final 10 minutes, reduce the temperature to 320°F. Brush the exposed surface of the chicken with BBQ sauce.
Cook for 5 minutes. Apply a second coat of BBQ sauce. Cook for the final 5 minutes, or until the glaze is set.
