Ingredients
- 2 firm, ripe avocados
- 2.1 oz all-purpose flour
- 2 eggs, beaten
- 3.5 oz fine breadcrumbs
- Paprika, to taste
- Cayenne pepper, to taste
- Salt, to taste
- Cooking spray
Instructions
Halve, pit, and peel the avocados. Slice into uniform wedges.
Prepare three shallow dishes: one with flour and salt; one with beaten eggs; one with breadcrumbs, paprika, and cayenne pepper.
Dredge each avocado wedge in the flour, dip in the egg, then coat completely with the seasoned breadcrumbs.
Arrange the breaded wedges in a single layer in the basket. Spray generously with cooking spray.
Cook at 400°F for 11 minutes, turning the wedges halfway through the cooking time to ensure even browning.
